goodbye hot weather hello fall!

The cooler weather has got me so happy! Its been so nice to actually sit outside. The only bad thing with it cooling down is more projects around the house. It's actually okay to be outside more than 15 minutes so we are having to get things done we've put off due to the heat. We are loving it being football season too. Lately we've been hanging around Tupelo. I really love staying in town. Its so nice to do NOTHING sometimes! My parents are getting a new dog tomorrow. They are rescuing a westie named April. Shes 1.5 years old. I know she will fit right in! My uncle and aunt from Birmingham came to visit yesterday. We really love having guest here! It seems like no one will come visit us. Since we've been home lately we have been cooking new things. Here are a few things we made this weekend that we LOVED and will make again.

1000 Island Dressing
I know its crazy sounding but homemade is so much better and cheaper!
1 cup mayo
1 cup ketchup
1/4 cup pickle relish
2 teaspoons worestershire sauce
1 table spoon sugar
1 finely chopped boiled egg
1/4 cup milk (optional if you like it thin use the milk)

Mix it all together! Its so good!

Peanut Butter and Chocolate Chip Cookies
These were amazing! The ingredients are things you pretty much have at home anyway(other than chocolate chips that we of course had in the pantry haha!)

1 stick of softened butter
1/2 cup peanut butter (if you like more of a peanut butter taste add more)
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/4 cup flour
1/2 teaspoon baking powder
1.2 teaspoon baking soda
1/4 teaspoon salt
1 cup choclate chips

Preheat oven to 375
cream peanut butter, sugars together. (I used my big mixer)
add the egg and mix until fluffy
blend the flour, baking powder, soda, and salt.
add the dry ingredients to the butter mixture.
mix it all together then add the chocolate chips.
Bake cookies 10-12 minutes

As you go through your week try and make someone elses better! It goes a long way to be nice to someone. Remember how you treat others speaks a lot about you! If you are looking to donate things donate dog food to your local shelter. If you don't have money to donate then go by there and donate your time to walk the dogs! Its amazing how helping others (animals too) will lift your spirits! Have a great week!
